This is a list of everything I have baked at some point rather than a list of what is available on any given day.  The Standing Schedule shows the current regular rotation, but please feel free to request anything you would like to try.  I'm still short some pictures, but try to include those, a full list of ingredients, a brief description, and a full set of details on pricing including the amounts.  My prices include the extra effort it takes me freshly mill all the flour I use, my slow recipes, and fair prices paid to local producers or organic growers for often very unique ingredients.  Grain and other costs can also be subject to major price fluctuations and could also affect prices in the short-term, but I'm working to setup long-term relationships with growers to keep the price level and sustainable.  I've also taken a stab at a nutritional analysis for some of my selections.


 
Naturally Leavened Hearth Bread: A single variety or a mix of high-protein Whole Wheat, Water, Salt, Russian Starter Culture    

Shaped as a batard - or a rectangle with rounded ends.  Flavor and texture will vary with the wheat's used, but the Russian Starter Culture gives the bread a lot of additional flavors without making it too sour.  This bread also keeps well.  Current grains I have to use in this bread include Hard Red Wheat, Hard White Wheat, and Spelt.  This dough can also be made as a pizza crust and pre-baked.  I make a plain version and one with added seeds/nuts/olives/cracked grains.  Prices range $3.75-$4.50 for the 1lb loaf.

Bialys
 Everything Rounds: Whole Organic Red Wheat, Water, Topping (Onions, olive oil, salt, and optional poppy seed; Cinnamon & organic sugar; OR Herb Pesto w/olive oil, garlic, and salt) Salt, Russian Starter Culture (Includes wheat)

These are somewhat like a Bialy, but shaped more like a small pizza than a roll and with more toppings.  They are made with the sourdough  of the day and topped with both the classic onions and other variations.  I've tried basil and cilantro pesto in season, onions and poppyseeds, cinnamon sugar, and roasted hot peppers.  3oz bialys are $1.50 each.
 
 Bread Crumbs: This will be available based on my supply of leftovers and, but will be a far cry from those fossilized crumbs they stock in the back of grocery store shelves.  I can crack them more or less finely depending on your preference.  8oz for $2.50.
 
 Buttermilk Muffins: Seasonal item (e.g. Sweet Potatoes, Pumpkin, Apples/Carrots, Banana/Walnuts),Whole Magnolia View Farm Wheat, Organic Sucanat, Buttermilk (Whole Milk, Culture, Modified Food Starch, Phosphate, Guar Gum, Carrageenan and Locust Gum, Vitamin D), Unsalted Butter, Eggs, Salt, Baking Soda, Vanilla (Vanilla Bean Extract, Alcohol)    

Modified regularly with fresh seasonal ingredients, these muffins are moist and rich.  They work for breakfast, snacks, or even warm them up and serve them with ice cream for dessert.    1lb set of 6 for $7.50, 5 oz set of 2 for $2.50, 2.5 oz single muffin for $1.25.
   Chocolate Almond Biscotti:Sugar, Almonds, Organic Red Fife Wheat, Water, Eggs, Cocoa Powder, Baking Powder, Baking Soda, Vanilla, Salt, Cardamom

These are pretty rich - the Red Fife wheat and the freshly ground Cardamom give it a very complex flavor.  It has lots of texture and is baked to less dry than a typical biscotti.  12 oz $9.25, 2 oz $1.50.
 
Cinnamon Raisin Mini Loaves
 Cinnamon Raisin Bread: Maple View Farm Lowfat Milk, Whole Organic  Wheat, Organic Raisins, Unsalted Butter, Eggs, Honey, Cinnamon, Salt, Yeast    

This bread will be baked in a large pan or as mini-loaves.  It is not overly sweet and has a great aroma with the cinnamon, honey, and raisins.  It makes wonderful French Toast as well. 1 1/2lb for $5.50, 5 oz mini-loaf (picture) for $1.50.
 
 CroissAINTS: Whole Organic Wheat, Water, Unsalted Butter, MapleView Whole Milk, Chocolate (Cocoa Mass, sugar, cocoa butter, soy lecithin), Magnolia View Farm Soft Whole Wheat, Honey, Salt, Yeast    

It's whole grain so the texture is different than a croissant, but it's a nice creation all of it's own.  These come with or without rich chunks of dark chocolate rolled up in the croissant.  1lb set of 6 for $6.75, 2.5 oz single croissant for $1.75.
 
 Croutons/Bread Cubes: This will be available based on my supply of leftovers.  I've tried some herbed croutons, cinnamon sugar snacks, and plain so that you can make your own stuffing/bread puddings.   12oz (6 cups)/$4.50.
 
Dark Rye With Caraway Seeds
Dark Rye: Whole Organic Rye, Water, Salt, Caraway Seeds (optional), Russian Starter Culture (includes wheat)  

This bread is firmly in the hearty European tradition with a dense and moist crumb.  I always make some without the Caraway seeds since some people just don't like them or think it is a little more versatile without them.  Either way the Wren's Abruzzi Rye is a traditional variety that would have been used for both the grain and the straw.  I find it lacks most of the bitterness of a regular Rye so you just get a very smooth, but distinctive flavor.  Comments by a group of visiting Russians said it was "pretty close" to what they were used to in the old country.  I maintain a wheat-based sourdough culture (collected from a Russian village no less!) so it ends up with less than 2% well-fermented wheat and might be able to be tolerated by those sensitive to wheat.  2lb loaf for $6.75-$7.00 and 1lb half-loaf for $3.50..

Hot Cross Buns
 Holiday Braid or Hot Cross Buns: Whole Organic Golden Wheat, Whole Milk, Organic Golden Raisins, Whole Organic Red Wheat, Organic Sugar, Unsalted Butter, Local Eggs, Yeast, Salt, Cinnamon, Nutmeg [Holiday Bread also includes Pecans, Dried Cranberries, Dried Tart Cherries, and Candied Lemon Peel] 

This is a Christmas morning tradition in my family.  It has candied fruit and nuts in a dough similar to the Cinnamon Raisin, but I'll make it with the golden wheat rather than the hard red to let the other flavors come through.  Some might call it a German Stollen, but there are a lot of variations out there so I'm not going to claim any authentic heritage on this one.  I also used this recipe for Hot Cross Buns this year and replaced all the fruit with just currants or golden raisins.  1lb Holiday Bread round for $8.00 and 1/2lb for $4.00.  Hot Cross 3.5 oz bun for $1.25 or 1/2 dozen buns for $7.50.
 
Honey Wheat Bread
 Honey Wheat Bread and Rolls: Whole Organic Wheat, Water, Local Honey, Salt, Yeast    

This bread comes as a pan loaf or as small rolls baked on the hearth.  Lots of honey gives it a moist crumb and helps the bread keep longer than a typical yeast bread.  This is my favorite bread to use for peanut butter and jelly, BLT, and grilled cheese, but it works with almost everything and is usually a child favorite.  1 3/4lb loaf for $6.75.  1lb half-loaf for $3.50.  3oz roll for $0.75each.
  Kamut English Muffins: Whole Organic Kamut Wheat, Water, Salt, Whole Wheat, Russian Starter Culture

Baked free-form on the hearth, but flattened out on both sides by flipping them half-way through the baking.  These can be fork-split or sliced depending on your preference for bumpiness.  The Kamut is a very hard grain which gives a certain chewy texture that I think is great for English Muffins.  They are great toasted with just butter and I like them with cream cheese and pepper jelly.  Someone told me that their mother ate one almost every morning with cottage cheese and strawberry jam.  1/2 dozen (1 lb) for $4.50 or $1.00 each (3oz per muffin)
 
 Pita or Naan: Whole Organic Wheat (Red Wheat or Spelt), Lowfat Milk, Unsalted butter, salt, yeast.

I get the oven heated up to about 600 degrees and cook these in a bunch of quick batches - sliding off a half-dozen at a time on each side of the oven and pulling them out in a few minutes.  The quick, high heat really does wonders to keep them soft on the inside and lightly caramelized on the outside.  Slower cooking just makes them chewier.  Serve them plain, fill them with your favorite sandwich items, or use to make a mini-pizza.   Red Wheat 1lb set of 4 for $4.25 or $1.25 individually.  Spelt 1lb set of 4 for $5.00 or $1.25 individually.
  Yogurt Scones and Irish Soda Bread: Whole Wheat or Spelt, Maple View Farm Whole Milk, A Fruit/Nut mixture, Maple View Farm Unsalted Butter, Organic Sugar, Baking Powder, Baking Soda, Salt, Live Yogurt Culture    

This scone started out as an American version of an Irish Soda Bread recipe.  I like scones this way since it make them very different from a muffin.  I use to do them with a milk/vinegar combination, but prefer now to use Yogurt.  They are crusty on the outside and flaky on the inside with less fat used though than a biscuit.  My two favorite fruit/nut combinations are use are Sweetwater Pecans, Golden Rasins, and Candied Lemon Peel OR Sweetwater Pecans and Dried Tart Cherries.  1lb set of 8 for $7-8, 2 oz scone $1.00-$1.25/each.  1lb Soda Bread round for $7.00.
   Potato Bread: Whole Organic Red Wheat, Water, Potatoes, Salt, Olive Oil, Yeast    

I tried this with some fresh Rosemary and it paired nicely.  2lb for $5.75, 1lb set of 6 rolls for $3.00 or $0.50 each.
 
 Red Fife Bread: Whole Organic Red Fife Wheat, Water, Salt, Vinegar, Yeast    

The wheat variety used in the bread give it the name.  The long baking of the loaf enhances the complex flavors of the Red Fife so that it is to be honest to strong for some people and loved by others.   The bread is moist and dense like the Dark Rye because of the extra quantity of water-soluble Red Fife proteins..  2lb loaf for $7.75.  1lb half-loaf for $4.00.
 
 Rustic Tarts or Tartlets: Whole Organic Wheat, Unsalted Butter, Powdered Sugar, Seasonal Fruit, Eggs, Honey, Salt, Cinnamon    

A rustic tart is a round of pastry dough crimped around the filling with an opening in the middle.  Lately I've been doing just the tartlets which are the size of a cookie and filled with dark chocolate or locally-made jam.   3oz tarts are $2.00 each.  Small tartlets are $0.75 each or 8 for $5.25.
 
Tortillas
 Tortillas: Whole Organic Wheat or Spelt, Water, Olive Oil, Salt

I made a nice heavy oak square tortilla press and am now putting these on the regular schedule.  They are about 8" in diameter and hand stretched with a little variation in shape.  They are a bit thicker than a store-bought tortilla and so are best used like a soft-taco, used flat, or made as a quesadilla.  I've tried shortening,butter, and lard in these, but settled on Olive Oil for good flavor and to keep them Vegan.  They can be steamed or warmed up over a low gas flame.  Brush any flour off the outside and then flip every 5-10 seconds until it is soft and warm.  $0.75 each or 1/2 dozen for $4.00.
